Ingredients
- 2 1/2 lbs. hot Italian sausage
- 1 cup diced onions
- 2 tspn minced garlic
- 1 tspn ground cumin
- 1 can (28 oz) crushed tomatoes
- 2 Tblspn tomato paste
- 2 Tbspn red-wine vinegar
- 1 can (160z) red kidney beans (optional)
- salt and pepper (optional)

Preparation
Step 1
Remove sausage meat from casings and crumble into a heavy 4-quart pot.
Stirring occasionally, cook over medium heat about 10 minutes until lightly brown, Drain off fat.
Add onion, garlic and cumin. cook about 5 minutes until onions wilts. Drain off any fat. Stir in tomatoes, tomato paste and vinegar until well blended. reduce heat. Cover and simmer about 15 minutes until thickened. Stir in beans, simmer until heated through. Taste chili; add salt and pepper if desired.
