Ingredients

  • 1 pound ground beef
  • 2 cups cooked long-grain rice
  • 1 can condensed tomato soup - (10 3/4 oz)
  • 1 can chopped green chiles - (4 oz) drained
  • 1 envelope taco seasoning mix - (1 1/4 oz)
  • 3 medium tomatoes chopped (3 cups)
  • 2 cups shredded Land O Lakes or Lake to Lake Cheddar cheese - (8 oz)
  • 1 cup crushed corn chips

Preparation

Step 1

Heat oven to 350 degrees. In 10-inch skillet cook ground beef over medium heat, stirring occasionally, until browned (5 to 8 minutes). Drain off fat.

Stir in rice, soup, chilies and taco seasoning mix. Spoon into 12- by 8-inch baking pan.

Top with tomatoes, cheese and corn chips. Bake for 30 to 35 minutes or until heated through.

This recipe yields 6 servings.
