Pumpkin Cookies

  • 1 c. sugar
  • 1 c. canned pumpkin
  • 1/2 c. shortening
  • 1 T. grated orange peel
  • 2 c. flour
  • 1 t. baking powder
  • 1 t. soda
  • 1 t. cinnamon
  • 1/4 t. salt
  • 1/2 c. raisins
  • 1/2 c. chopped nuts
  • Light Brown Glaze
  • 1/4 c. butter
  • 2 c. powdered sugar
  • 1 t. vanilla
  • 1 to 2 T. milk


Preparation time 15mins
Cooking time 60mins


Step 1

Cookies: Heat oven to 375. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, soda, cinnamon and salt. Stir in raisins and nuts.

Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 8-10 minutes until light brown. Immediately remove from cookie sheet and cool. Spread with Light Brown Glaze.

Glaze: Heat butter in saucepan over medium heat until delicate brown. Stir in powdered sugar and vanilla. Stir in milk until smooth.
