Ingredients

  • 3/4 cup Flaxseed Meal
  • 1-1/2 cups Whole Wheat Flour
  • 3/4 cup Oat Bran Cereal
  • 1/2 cup Splenda for Baking (or sugar)
  • 1/2 cup Splenda Brown Sugar (or brown sugar)
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 large Zucchini, grated
  • 1 Eggs (or 1/4 cup egg whites)
  • 3/4 cup Milk
  • 1 tsp Vanilla

Preparation

Step 1

Mix all the dry ingredients in a large bowl. Combine completely.
Step 2
Stir in the zucchini, milk, egg and vanilla until just combined.
Step 3
Scoop into muffin pan.
Step 4
Bake for 18-20 mins at 350 degrees.

Makes 12 muffins.
