Ingredients
- 1 cup unsalted butter, melted
- 1 cup sugar
- 1/2 cup brown sugar
- 1/3 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cup flour
- 2 cups old fashion oats
- 1/2 cup toasted chopped pecans
- 1/2 cup chopped dried cherries
- Heaping 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Preparation
Step 1
Pre-heat oven 350 degrees
Place the butter, sugar, brown sugar and pumpkin puree in the bowl of a
mixer. Mix well. Add the egg and vanilla and mix until smooth. Add the
flour, oats, pecans, cherries, spices, salt and baking soda and mix well.
Spoon onto a well greased sheet pan and cook until golden brown about
10 minutes. Let cool about 3-5 minutes then remove from the pan. Eat or
store in an airtight container.
