Ingredients
- 1/2 c. chicken broth
- 1/2 c. balsamic vinegar
- 1/4 c. finely chopped shallots or sweet onion
- 1/4 c. brown sugar
- 1/4 tsp. grated orange rind
- 1/4 c. fresh orange juice
- 1 tsp. vanilla
- 16 skinless, boneless chicken thighs
- cooking spray
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
Preparation
Step 1
Preheat oven to 450.
Combine first 7 ingredients in a small saucepan. Bring to a boil. Reduce heat and simmer until reduced to 1/2 cup (about 20 minutes).
Arrange chicken thighs in a single layer in the bottom of a roasting pan coated with cooking spray. Sprinkle chicken evenly with salt and pepper. Bake for 10 minutes.
Brush half of the broth mixture over the chicken; bake 5 minutes. Brush remaining broth mixture over the chicken; bake 15 minutes or until done.
Per serving: 210 calories, 5.5 gr. fat, .2 gr. fiber, 11 gr. carbohydrate.
