Latte Pound Cake

Serve this moist pound cake with fresh mixed berries for a quick and easy dessert.

Ingredients

  • 5 tablespoons instant coffee or instant espresso coffee
  • 1/2 cup hot milk
  • 1 1/2 cups sugar
  • 1 1/2 cups unsalted butter, at room temperature
  • 4 eggs
  • 2 2/3 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Preparation

Step 1

1. Heat the oven to 325°F. Grease and flour either an Angel Food or pound cake pan.

2. In a small bowl, combine the coffee and the hot milk; set aside.

3. In a large mixing bowl, mix the sugar and butter until light and fluffy.

4. Add the eggs, one at a time, mixing well after each addition.

5. Mix in the flour, baking powder, salt and coffee mixture; mix well. Fold in the nuts.

6. Pour into the prepared pan.

7. Bake for 60 to 70 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool 10 minutes in the pan. Remove from the pan and cool completely on a wire rack. If desired, drizzle with Vanilla or Coffee Glaze.
