Ingredients

  • toppings:
  • 1/4 c (1/2 stick butter)
  • 1/4 c chopped onion
  • 1/4 c flour
  • 1 can (14.5 oz. chicken broth)
  • 1 can (12 oz. evaporated milk)
  • 2 lg or 3 med baking potatoes, baked or microwaved
  • cooked crumbled bacon
  • shredded cheddar cheese
  • sliced green onions

Preparation

Step 1

-melt butter in lg. saucepan over med. heat
-add onion; stir 1-2 min.
-stir in flour. Gradually stir in broth and evaporated milk
-scoop potato pulp from 1 potato (reserve potato skin) & mash
-cook over med. heat until mixture comes to a boil
-dice remaining potato skin and potato. Add to soup.
-garnish with toppings and serve.
