Ingredients

  • 1/2 cup softened butter at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup mashed ripe bananas
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1/2 cup chopped pecans or walnuts

Step 1

Preheat oven to 350 degrees. Butter 9X9 loaf pan. In a large bowl, cream butter and sugar. Add eggs one at a time to incorporate.

In a medium bowl, whisk together flour, salt and baking soda. Add to the butter mixture until just combined. Add bananas, sour cream and vanilla; mix to combine. Stir in nuts and pour into prepared pan.

Bake until tester comes out clean for about 1 hour and 10 minutes. Let rest in pan for 10 minutes before turning out onto cooling rack.
