Ingredients

  • 1 (5 oz) Wild Harvest Organic Spinach leaves
  • 1 cup Farm Stand Sweet Grape Tomatoes, halved
  • 1/4 cup Baking CLassics Chopped walnuts
  • 1 ripe avocado, peeled, pitted and chopped
  • 2 TBSP freshly squeezed lemon juice
  • 2 tsp rice vinegar
  • 1 tsp chopped garlic
  • 1 tsp lemon zest
  • 2 Tbsp extra virgin olive oil

Step 1

In a large bowl, combine spinach, tomatoes, nuts and avocado; set aside

In small bowl, whisk together lemon juice, vinegar, garlic andlemon zest; slowly whisk in oil until well combined. Salt and pepper to taste.

Toss salad with vinaigretta. Serve immediately.
