Ingredients

  • Cookie:
  • 1 pkg lemon cake mix
  • 1/3 C vegetable oil
  • 2 eggs
  • 1/4 C sugar
  • Glaze:
  • 1 C powdered sugar
  • 2-3 T lemon juice
  • a little extra sugar for pressing

Preparation

Step 1

Preheat oven to 375.

In bowl combine all ingredients and mix well.

Roll dough into 1" balls and place on cookie sheet about 2" apart.

Press down with a sugar coated bottom of a glass.

Bake for 5-7 minutes or until edges are golden brown. Allow to cool 1-2 minutes on sheet after removing from the oven before transferring to a baker's rack to cool.

In small bowl, combine powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
