Butternut squash bread

  • 1 C pureed cooked butternut squash
  • 2 eggs
  • 1/2 C vegetable oil
  • 1/4 C water
  • 1 C sugar
  • 1/2 C brown sugar
  • 1 3/4 C flour
  • 1 t baking soda
  • 1/2 t salt
  • 2 t cinnamon
  • 1/2 t nutmeg
  • 1/2 t ground cardamon

Step 1

Preheat oven to 350 and grease 1 loaf pan.

In large bowl combine squash, eggs, oil, water and sugar blending well.

In separate bowl combine all dry ingredients.

Stir the dry ingredients into the squash mixture until just incorporated - don't over mix.

Pour batter into prepared loaf pan and bake for 55-65 minutes or until tooth pick inserted in the center comes out clean.

Let sit for a few minutes in the pan after removing from the oven. Then take a butter knife and loosen the edges from the pan and turn out onto a wire bakers rack covering with a dry towel until completely cooled.
