Ingredients

  • 3 C canned pumpkin - can used fresh cooked
  • 1 1/2 C vegetable oil
  • 4 C sugar
  • 6 eggs
  • 4 3/4 C flour
  • 1 1/2 t baking powder
  • 1 1/2 t baking soda
  • 1 1/2 t salt
  • 1 1/2 t cinnamon
  • 1 1/2 t nutmeg
  • 1 1/2 t ground cloves

Preparation

Step 1

Preheat oven to 350 and grease and flour 3 9x5 loaf pans.

In large bowl combine pumpkin, oil, sugar, and eggs. In separate bowl combine all dry ingredients then blend them into the pumpkin mixture.

Divide batter evenly between the 3 prepared pans and bake for 50-60 minutes or until the top of the loaf springs back when gently touched.

Allow to cool for a short time before running a butter knife around the edge of the pans to turn out onto a wire bakers rack. Cover with a dry towel or cloth until completely cool.
