Ingredients
- Frosting:
- 1 1/2 C flour
- 1 C sugar
- 1/2 t baking soda
- 1/2 t salt
- 1/2 C shortening
- 2 eggs
- 1 very ripe banana (the riper the stronger the taste)
- 1/3 C milk
- 1 t lemon juice
- (to quick ripen a banana leave in peel and put in freezer overnight, will darken as it defrosts... bananas may also be peeled and frozen to be used later --look gross but work well for baking!)
- 2 T softened butter
- 2 C powdered sugar
- 1/2 t salt
- 1 t vanilla
- 1/2 very ripe banana

Preparation
Step 1
Cake:
Preheat oven to 350 and lightly grease or spray a cake pan(s)
Combine all cake ingredients and beat for 2 minutes. Don't over beat.
Pour batter into prepared pan and bake for 25-30 minutes or until tooth pick inserted comes out clean.
Allow to cool prior to frosting. If you prefer a more glazed texture on the frosting, frost while still slightly warm.
Frosting:
Combine all frosting ingredients and spread over cooled cake.
