Ingredients

  • Frosting:
  • 1 1/2 C flour
  • 1 C sugar
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/2 C shortening
  • 2 eggs
  • 1 very ripe banana (the riper the stronger the taste)
  • 1/3 C milk
  • 1 t lemon juice
  • (to quick ripen a banana leave in peel and put in freezer overnight, will darken as it defrosts... bananas may also be peeled and frozen to be used later --look gross but work well for baking!)
  • 2 T softened butter
  • 2 C powdered sugar
  • 1/2 t salt
  • 1 t vanilla
  • 1/2 very ripe banana

Preparation

Step 1

Cake:

Preheat oven to 350 and lightly grease or spray a cake pan(s)

Combine all cake ingredients and beat for 2 minutes. Don't over beat.

Pour batter into prepared pan and bake for 25-30 minutes or until tooth pick inserted comes out clean.

Allow to cool prior to frosting. If you prefer a more glazed texture on the frosting, frost while still slightly warm.

Frosting:

Combine all frosting ingredients and spread over cooled cake.
