GINGERBREAD PANCAKES

No pumpkin pie spice? Make your own using these ingredients:
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
4-8 teaspoon ground cloves
No buttermilk? Place 1 tablespoon of lemon juice or vinegar to measuring cup and fill to the 1 cup line with milk. Stir and let set to thicken slightly.

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1 egg
- 2 tablespoons molasses
- 1 tablespoon vegetable oil
- 1 cup low-fat butter milk
Preparation
Step 1
Mix dry ingredients in a bowl, in another bowl, beat egg. Stir in molasses, oil and buttermilk. Pour milk mixture into dry ingredients, stir together lightly. Bake on a hot, lightly greased or buttered griddle. Place leftovers in fridge or freezer within 2 hours.
