Ingredients

  • 1/2 cup plus 2 tbsp heavy cream
  • almond liqueur
  • 8 oz semi-sweet chocolate, finely chopped
  • 1/4 cup icing sugar
  • 1/4 cup cocoa
  • 1/2 cup finely chopped assorted nuts, like walnuts, pecans, pistachios

Preparation

Step 1

In a small saucepan, place cream and liqueur and just bring to a boil

Remove from heat and let stand 15 minutes

Line 2 baking pans one with parchment and set them aside

Return cream to the heat and bring to a boil

Place chocolate in a heat proof bowl

Run cream through a sieve over the chocolate. Stir until melted and smooth

Pour chocolate onto the unlined pan and spread in an even layer

Chill in freezer for about 15-20 minutes until hardened but malleable

Using a tbsp, scrape enough to form a 1" ball and place on lined pan

Transfer to fridge for 10 minutes.

Place the icing sugar, cocoa and nuts in 3 bowls and roll the truffles as desired
