Ingredients
- 1 tbsp. (15 ml) olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb. (500 g) ground pork
- 2 hot Italian sausages, casings removed (about 10 oz. [300 g])
- 1 lb. (500 g) lean ground beef
- 1 egg
- 1 c. (250 ml) breadcrumbs
- 1/3 c. (75 ml) grated Romano cheese
- 1/2 tsp. (2 ml) salt
- 4 slices of prosciutto
- 4 slices of provolone cheese
- 8 oz. (250 g) spinach, blanched and excess moisture removed
- 1/4 c. (50 ml) basil leaves
- 1/4 c. (50 ml) finely chopped sundried tomatoes
- 3 c. (750 ml) warm tomato sauce for serving
Preparation

1. Heat olive oil in a small skillet and cook onion and garlic over medium heat until just soft. Remove from heat and let cool.
2. In a medium bowl, combine onion-garlic mixture, ground pork, sausage meat, ground beef, egg, breadcrumbs, cheese and salt. Mix well.
3. Place a piece of parchment paper on your counter. Form the meat mixture into a rectangle about 9 by 12 inches (22 cm x 30 cm).
4. Place the strips of prosciutto over the meat mixture followed by the slices of cheese, making sure to leave a 2-in. (5-cm) border at the top of the meatloaf.
5. Place the spinach over the cheese followed by the basil and sundried tomatoes.
8. Bake in a preheated 375F (190C) oven for 90 to 100 minutes. Check the internal temperature with an instant-read thermometer making sure it reaches 170F (77C).
9. Remove from oven and let cool at least 15 minutes before slicing and serving with your favourite tomato sauce.
