Ingredients
- 1 C flour
- 1 C graham cracker crumbs
- 1/2 C packed brown sugar
- 2 t baking powder
- 1/2 t salt
- 1 C chopped cranberries (I use dried)
- 1 C raisons
- 1/2 C walnuts
- 1 T orange zest (I have used extract instead)
- 1 beaten egg
- 1 C orange juice
- 1/3 C vegetable oil

Preparation
Step 1
Preheat oven to 350 and grease loaf pan.
In large bowl combine flour, crumbs, brown sugar, baking powder, and salt. Stir in cranberries, raisons, nuts, and zest. Add beaten egg (if using extra instead of zest add it to the orange juice) orange juice, and oil. Stir until blended.
Pour into prepared loaf pan and bake for 1 hour or until inserted tooth pick inserted in center comes out clean.
Let sit for a few minutes in the pan after removing from the oven. Then take a butter knife and loosen the edges from the pan and turn out onto a wire bakers rack covering with a dry towel until completely cooled.
