Ingredients

  • cake:
  • 1 boxed yellow cake mix
  • 1 pkg vanilla instant pudding mix
  • 1 1/3 C water
  • 4 eggs
  • 1/4 C vegetable oil
  • 2 C flaked coconut
  • 1 C chopped walnuts
  • frosting:
  • 4 T melted butter
  • 2 C flaked coconut
  • 2 t milk
  • 1/2 t vanilla
  • 1 8 oz cream cheese
  • 3 1/2 powdered sugar

Preparation

Step 1

Preheat oven 350 and grease a 9 X 13 cake pan.

In large bowl combine cake mix, pudding mix, water, eggs, and oil. Blend for 4 minutes. Stir in coconut and walnuts. Pour into prepared pan.

Bake for 30 minutes or until top springs back when gently touched. Allow to cool before frosting.

Frosting;

Melt 2 T butter over low heat and add 3/4 C of the coconut and stir until browned. Blot oil by transferring to a paper towel covered plate.

Cream the remaining 2 T of butter with the cream cheese. Alternating beat in the milk and powdered sugar and finally the vanilla. Stir in the remaining untoasted coconut.

Spread the frosting on the completely cooled cake and then sprinkle with the toasted coconut.
