Chinese Chiken Salad

Snow Peas Celery Sesame seeds
Carrots water chestnuts slieed almonds

Ingredients

  • 6-8 oz. chicken breast
  • Soy Sauce to cover
  • 4 Tablespoons butter
  • 4 Tablespoons olive oil
  • 3 teaspoons soy sauce
  • 2 Tablespoons peanut oil
  • 2 Tablespoons vinegar
  • 1 teaspoon mayonnaise
  • 2 heads crisp iceberg lettuce, shredded thin as possible

Preparation

Step 1

* Marinate chicken in soy sauce for 30 minutes
* Saute in butter and olive oil about 4 minutes on each side.
* Remove from pan and slice into thin strips. Keep warm.
Chiken can be cut in strips before cooking

3 teaspoons soy sauce
2 Tablespoons peanut oil
2 Tablespoons vinegar
1 teaspoon mayonnaise
" * whisk together ( can bouble if needed )
"
2 heads crisp iceberg lettuce, shredded thin as possible
" * Combine chicken , lettuce and dressing mixture , toss to coat

Shred or chop the following vegetables and add to lettuce :
( 1/2 to 1 cup of each, personal preference )
