Ingredients
- 1 tablespoon garlic olive oil
- 1 green bell pepper, diced
- 1/2 pound whole wheat penne
- 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red onion, diced
- 2 tablespoons curry powder
- 1 (14 1/2 ounce) can diced tomatoes
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/8 teaspoon dried thyme

Preparation
Step 1
1. Sprinkle chicken with salt and pepper and 1 tablespoon curry powder. Sauté on medium-high heat with garlic oil until browned, but not cooked through. Remove from pan and put in bowl.
2. Turn heat to medium-low, add onion and bell pepper to pan. Season with salt and pepper and remaining curry powder. Cook until soft.
3. Return chicken to pan, add tomatoes, thyme, basil, and oregano. Bring to a boil, cover and turn down heat. Simmer 20 minutes, until chicken is cooked through. Stir occasionally.
4. Cook pasta until aldente, and add to sauce mixture when sauce is done. Stir to combine.
