Chicken and White Bean Chili

Ingredients

  • 3/4 lb. skinless chicken breast, cubed
  • 3/4 lb. chicken sausage
  • 1/2 diced jalapeño
  • 3 cups chicken stock
  • 1 tsp Chipotle Chili Base
  • 1-4.5 oz. can chopped green chilies
  • 2 Tbs olive oil
  • 3 cups cooked Cannellini Beans
  • Cilantro
  • Monteray Jack Cheese
  • Corn tortilla strips

Preparation

Step 1

In a Dutch oven heat oil over medium high heat.

Add chicken and sausage and cook until browned.

Stir in jalapeño and Chipotle Chili Base.

Cook for 2 minutes.

Add chicken stock, green chilies and Cannellini Beans.

Bring mixture to a boil, reduce heat and simmer for 5 minutes, then serve.

Garnish each bowl with a little cilantro, cheese and tortilla strips.
