Salmon en Papillote

- 16 ounce salmon, cut into four pieces; fillet
- olive oil or butter for coating
- 1/4 cup soy sauce
- 2 scallions; chopped
- 3 teaspoon sesame oil
- juice of 1/2 lime
- 4 tablespoon sesame seeds; toasted
- freshly ground black pepper

Step 1
Preheat oven to 450°F Cut 4 large squares of parchment paper, twice the
size of fillets. Fold paper in half and cut a half-circle. Lightly oil or
butter one side of paper. Mix together soy sauce, scallions, sesame oil and
lime juice and set aside. Place salmon on one half of paper near fold and
divide soy sauce mixture evenly over each piece of salmon. Sprinkle each
fillet with sesame seeds and season with pepper. Fold paper over food and
seal edges by folding a small section of paper at a time; crease it with
your fingers, then fold again to make a double rim. Continue until the
whole packet is closed. The edges must be tightly sealed or parchment paper
will not puff during baking. Place on a baking sheet and bake for 12
minutes, until paper is browned and puffed. Serve immediately.
