Tricks from the Southern Living Test Kitchens
1. Enjoy those last herbs of summer:
To store fresh herbs for maximum flavor and to extend their shelf life, wash and dry them in a salad spinner. Wrap herbs in dampened white paper towels; place in a zip-top plastic bag, and seal; place in the refrigerator’s crisper. Use the washed fresh herbs as needed. This trick also works well with fresh lettuces and greens.
2. Grease with ease:
To grease or butter a baking pan, simply grab a piece of butter or shortening with a paper towel, and thoroughly coat the pan. Baked goods won’t stick, and your hands will be grease free. And speaking of grease, when we call for greasing a pan in our recipes, we use butter or shortening. When we say to “lightly grease,” use vegetable cooking spray.
3. Popeye would be proud:
Frozen spinach adds color and flavor to many dishes, but too much liquid can make your prize recipe soggy. To remove excess liquid, place frozen spinach in a colander, and press absorbent paper towels against the spinach, squeezing moisture out.
