  • ◾ 4 cups frozen O'Brien potatoes with onions and peppers
  • ◾ 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • ◾ 1/8 teaspoon salt
  • ◾ 1/4 teaspoon chili powder
  • ◾ 1/8 teaspoon ground black pepper
  • ◾ 1 cup shredded Cheddar cheese

Step 1

1.Heat oil in large nonstick skillet over medium-high heat. Add potatoes, drained tomatoes, salt, chili powder and pepper; cook 10 to 12 minutes or until potatoes are tender, stirring occasionally. Sprinkle with cheese; let stand until cheese melts.
