Ingredients

  • 1 egg white or 1/4 cup egg substitute
  • 1/3 cup catsup
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup shredded carrot
  • 1/4 cup fine dry bread crumbs
  • 1/4 cup skim milk
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 1 pound lean ground beef
  • 2 TB catsup

Preparation

Step 1

In a large mixing bowl combine egg white or egg substitute, 1/4 cup catsup, onion, celery, carrot, bread crumbs, milk, pepper, and salt. Add ground beef and mix well. In a shallow baking pan or dish pat the meat mixture into a 7x3x2 inch loaf.

Bake at 350 for 45 - 50 minutes or until no pink remains. Spread the 2 TB catsup over the top of the meatloaf. If desired, serve with additional catsup.

MEXICAN STYLE: Prepare as above except substitute salsa for the catsup and add 1 tsp chili powder with the bread crumbs. If desired, serve with additional salsa.
