CUMIN MACARONI SALAD

Ingredients

  • 1 lb. elbow macaroni
  • 1 cup mayonnaise, plus more if needed
  • 2 tbsp. sweet relish
  • 1/4 tsp. salt
  • 1 1/2 tsp. cumin
  • 2 tsp. dry mustard or 2 tbsp. yellow mustard
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1/2 cup green olives, halved or quartered
  • 1/2 cup black olives, halved or quartered
  • 4 hard boiled eggs, chunked

Preparation

Step 1

1.Boil pasta in salted water per package instructions.
2.While pasta is cooking make the dressing by combining the mayonnaise, relish, salt, cumin, and mustard in a large bowl.When pasta is finished cooking, drain and add to dressing. Mix in celery, carrot, olives, and eggs. Add more mayonnaise to reach desired consistency if needed.

Notes: To avoid the salad being so “mayonnaise heavy” add a few tablespoons or more of buttermilk to the dressing.
