Ingredients
- 2 or 3 chicken breasts
- 8 tortillas
- 1/2 stick butter
- 1/2 onion, chopped
- 1 small green pepper, chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Ro-Tel tomatoes/chilies, drained
- 2 c sharp cheddar cheese, grated
Preparation
Step 1
Cook chicken. Debone and dice. Saute onion and pepper in butter.
Add the two soups and drained Ro-Tel chilies. Simmer until well blended.
While this simmers, cut the tortillas into quarters. Dip in hot grease. Spread some of the sauce in a baking dish.
Layer chicken, tortillas, and sauce (2 layers of each). Top with the cheese.
Bake uncovered at 325 degrees for 1 hour.
Makes 6-8 servings.
