Seafood Stuffed Mirlitons

Ingredients

  • 4 mirlitons
  • 1 stick unsalted butter
  • 1 onion, finely chopped
  • 1/2 lb. shrimp, peeled and chopped
  • 2 Tbsp. diced ham
  • 1/2 lb. crab claw meat
  • 1 bunch thinly sliced green onions
  • 1/4 cup seasoned breadcrumbs
  • Additional butter and breadcrumbs for topping
  • salt and pepper to taste

Step 1

Preheat oven to 350.

Split each mirliton in half and boil in salted water until tender. Remove and discard the seed. Scoop out the flesh with a spoon, preserving the shell. Reserve flesh and the shell.

Melt butter in a skillet over med-high heat. Add onions and saute until translucent. Add the mirliton flesh. Stir in shrimp and cook until just pink. Remove from heat and add ham, crab meat, onions and breadcrumbs. Season to taste. Fill mirliton halves with stuffing. Sprinkle with breadcrumbs and top with a pat of butter.

Bake 20-25 minutes until heated through.
