Lobster Sandwich

Ingredients

  • Aioli sauce:
  • 2 8-ounce lobster tails, broiled
  • 1 small onion, thinly sliced
  • 1 shallot, thinly sliced
  • 2 Roma tomatoes, thinly sliced
  • lettuce leaves
  • Aioli sauce
  • Havarti or cheddar cheese
  • Bread of choice
  • 3-4 tablespoons of mayonnaise
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • lemon juice to taste
  • olive oil to taste
  • cracked pepper
  • taragon flakes

Preparation

Step 1

Mix Aioli sauce ingredients together and refrigerate at least 1 hour in advance.

Carmelize onion and shallot in a small amount of olive oil.

Spread one side of each slice of bread with butter and toast in skillet over medium-high heat until golden. Cool. Spread the same side of the bread with Aioli sauce. Layer each slice with tomatoes, lettuce leaves, and carmelized onions and shallots. Break lobster into bite-sized pieces and place on bread. Cover each with cheese. Broil in oven until cheese bubbles.
