Chai-Oat Cookies

Any white bean such as navy, butter, or cannellini beans may be used here (drain, but do not rinse!).

Ingredients
- 1 c oat flour
- 1/2 c white beans, drained
- 1 very ripe banana
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp garam masala
- 1/4 tsp salt
- 1/4 c light brown or raw sugar (optional)
- 1/4 c instant oats
- 1/2 c powdered sugar, for rolling
Preparation
Step 1
1. To make oat flour, whiz instant or rolled oats in your blender until they reach a flourlike consistency.
2. Measure 1 cup of oat flour and set aside. In a mixing bowl. mash beans and banana with a fork to the consistency of refried beans.
3. Stir in spices, salt, and sugar, and mix well.
4. Using an electric mixer, beat in oat flour.
5. Add 1/4 cup of instant oats, stir ring to combine and set batter aside to rest.
6. Preheat oven to 350°F.
7. Grease a rookie sheet or line with parchment paper
and set aside.
8. Pick off walnut-sized portions of the hatter and roll into balls, stopping to wash hands periodically so the batter doesn't stick.
9. Bake for 10 to 12 minutes, until firm and the bottoms are slightly golden.
10. Let cool for a few minutes, then sprite 1ightly with oil spray and rolls balls in powdered sugar.
