Ingredients

  • Bars:
  • 1/2 C butter
  • 1 C firmly packed brown sugar
  • 1 egg
  • 1 T dark rum or 1 t rum extract
  • 1 C flour
  • 1/8 t baking soda
  • 1/2 t baking powder
  • 1 t cinnamon
  • 1/4 t salt
  • 1 C mushed bananas
  • 1/2 C chopped pecans
  • Frosting:
  • 1 T butter
  • 2 oz cream cheese
  • 1/8 C brown sugar
  • 1/2 t rum or vanilla extract
  • 1/2 t cinnamon
  • 1 C powdered sugar

Preparation

Step 1

Bars:

Preheat oven to 350 and lightly grease and flour a 9" pan.

Cream butter and sugar until creamy. Add egg and rum mixing well. Whisk together flour, baking soda, baking powder, cinnamon, and salt. Gradually mix into the butter mixture. Fold bananas and nuts.

Bake for 20-25 minutes or until a tooth pick inserted pulls out clean. Leave cooling in the pan for 8-10 minutes then turn out onto a wire baker's rack to finish cooling.

Frosting:

Cream butter, cream cheese, sugar, and rum with an electric mixer. Add cinnamon and then the powdered sugar beating to desired consistency. If too thin you will need to add a little extra powdered sugar a pinch at a time or if too thick a splash of milk to thin out a bit.

Spread frosting over completely cooled cake. Garnish with pecans
