Ingredients

  • bars (cake):
  • 4 eggs
  • 1 C salad oil (vegetable)
  • 2 C sugar
  • 15 oz pureed pumpkin (fresh cooked or canned)
  • 2 C flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 t baking soda
  • 2 t cinnamon
  • 1/2 t ginger
  • 1/2 t ground cloves
  • 1/2 t nutmeg
  • shortening to grease pan + additional flour for pan
  • Frosting:
  • 1 6-8 oz pkg of cream cheese
  • 3/4 stick of butter (3/4 C)
  • 1 T cream or milk
  • 1 t vanilla
  • 4 C powdered sugar

Preparation

Step 1

Cream eggs, oil, sugar, and pumpkin.

Sift remaining dry ingredients into the creamed mixture. Mix well and pour into greased and floured baking pan.

Bake at 350 for 25-30 minutes until tooth pick inserted comes out clean.

Set aside and cool before frosting

Frosting:

Cream ingredients until desired consistency adding a little extra powdered sugar if necessary to thicken or a little more cream or milk to thin if too thick.

Once bars are cool frost, cut and serve.
