Ingredients

  • bars (cake):

  • 4

    eggs

  • 1

    C salad oil (vegetable)

  • 2

    C sugar

  • 15

    oz pureed pumpkin (fresh cooked or canned)

  • 2

    C flour

  • 2

    t baking powder

  • 1/2

    t salt

  • 1

    t baking soda

  • 2

    t cinnamon

  • 1/2

    t ginger

  • 1/2

    t ground cloves

  • 1/2

    t nutmeg

  • shortening to grease pan + additional flour for pan

  • Frosting:

  • 1

    6-8 oz pkg of cream cheese

  • 3/4

    stick of butter (3/4 C)

  • 1

    T cream or milk

  • 1

    t vanilla

  • 4

    C powdered sugar

Directions

Cream eggs, oil, sugar, and pumpkin. Sift remaining dry ingredients into the creamed mixture. Mix well and pour into greased and floured baking pan. Bake at 350 for 25-30 minutes until tooth pick inserted comes out clean. Set aside and cool before frosting Frosting: Cream ingredients until desired consistency adding a little extra powdered sugar if necessary to thicken or a little more cream or milk to thin if too thick. Once bars are cool frost, cut and serve.
