- 1 large cucumber
- 1 small to medium onion
- Wateroak Farm's yogurt
- sea salt

Step 1
Chill all ingredients. Skin the cucumber if the cucumber beetles have been after the skin, or if skin bothers you. (generally the skin is good for you, as are the seeds, so don't de-seed the cucumber). Chop the cucumber into small 1/2" chunks.
Chop the onion into small dice. Combine the cucumber chunks. Place the mixture in your blender (in batches if necessary). Add enough yogurt to make the mixture blend smoothly. You can leave chunks if you're that sort of soup eater. It'll be fine. I like to drink it, so I blend it. Season the soup with sea salt to taste. Chill thoroughly for the most refreshing soup or drink.
