Mom's coconut bread

  • 2 C sugar
  • 1 C vegetable oil
  • 4 eggs
  • 2 t coconut extract
  • 3 C flour
  • 1/2 t salt
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1 C buttermilk
  • 1 C shredded coconut

Step 1

Preheat oven to 350 and grease a 9x5 loaf pan.

In large bowl beat together sugar and oil. Beat in the eggs, and extract.

In separate bowl combine all dry ingredients except coconut.

Stir the dry ingredients into the egg and sugar mixture alternating with the buttermilk and coconut.

Pour batter into prepared loaf pan and bake for 45 minutes or until tooth pick inserted in the center comes out clean.

Let sit for a few minutes in the pan after removing from the oven. Then take a butter knife and loosen the edges from the pan and turn out onto a wire bakers rack covering with a dry towel until completely cooled.
