Quinoa with Roasted Pine Nuts and Cilantro

Ingredients

  • 1/4 cup pine nuts
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, chopped
  • 1/2 tablespoon chopped garlic
  • 1 cup uncooked quinoa (rinsed and drained if not purchased prewashed)
  • 2 cups vegetable broth
  • 1-1/2 teaspoons fine lemon zest
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup chopped fresh cilantro leaves

Preparation

Step 1

Directions: In a medium sauté pan over medium heat, heat pine nuts, stirring occasionally, for about 3 minutes or until lightly browned. Be careful not to burn the pine nuts. Transfer toasted pine nuts to a bowl and set aside. In a medium saucepan over medium heat, heat olive oil. Add yellow onion and garlic, saute about 2 minutes. Stir in quinoa and vegetable broth. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes or until almost all of the liquid is absorbed. Turn off heat and let quinoa stand, covered, for 5 minutes. Stir lemon zest, cayenne, coriander, sea salt, black pepper, cilantro, and pine nuts. Serve warm or chill in refrigerator and serve cold.
