Potato criquettes (Italian fried potatoes)

  • 4 C mashed potatoes (homemade, leftover, or instant)
  • 2 T dried parsley
  • 1/4 t black pepper
  • 1/4 C minced onion
  • 2 eggs
  • 1/2 C grated parmesan cheese
  • 1 pkg cooked bacon crumbled
  • 1 C Italian seasoned bread crumbs
  • 1 T flour
  • oil for pan frying or deep frying



Step 1

Prepare mashed potatoes, cook and crumble bacon, then combine with parsley, eggs, pepper, cheese, onion and flour. Form potato mixture into small patties and coat in bread crumbs. Deep fry or pan fry until golden brown. Serve hot. (if pan frying and they crumble... reduce the amount of oil your using)
