Ingredients
- 3 Tbsp. flour
- 1/2 teasp. salt
- 1/4 teasp. pepper
- 1 lb. boned chicken creasts
- 2 Tbsp. olive oil
- 1 med. onion
- 1 Tbsp. margarine or butter
- 1 cup chicken broth
- 3 Tbsp. lemon juice
- 1/2 teasp. dried thyme
- 2 Tbsp. parsley
Preparation
Step 1
Combine flour, salt and pepper. Add chicken and coat. Remove chicken and save flour mixture. Heat 1 Tbsp. oil, brown chicken one side.. Add 1 Tbsp. olive and brown other side. Set chicken aside.
Add butter to skillet, add onion and cook until completely incorporated.
Add broth and 2 Tbsp. lemon juice and thyme
Bring to boil and add 1 Tbsp. lemon juice. Sprinkle with parsley and serve.
