- STRAWBERRY SAUCE:
- 6 eggs
- 1 cup milk
- 1/4 cup orange-flavored liqueur or orange juice
- 1/2 cup sugar
- 1 cup flour
- 1/4 teaspoon salt
- 1/4 pound butter
- Strawberry Sauce, see below
- powdered sugar, if desired
- dairy sour cream, if desired
- 2 (10 ounce) packages frozen strawberries in syrup
- 2 tablespoons orange-flavored liqueur or orange juice
Preparation
Step 1
In blender or large bowl, mix eggs, milk, liqueur or orange juice, sugar, flour and salt until blended. Preheat oven to 425 degrees. Melt butter in 9x13-inch pan in oven until it sizzles. Do not let brown. Remove from oven and immediately pour batter over butter. Bake for 20 minutes or until puffed and brown.
Meanwhile, prepare sauce. Remove pancake from oven. Sprinkle with powdered sugar, if desired. Pancake falls quickly, so serve immediately with warmed sauce and sour cream, if desired.
NOTE: Pancakes can be baked in pie plates. Melt 2 tablespoons butter in each plate and pour about 1 cup batter in each.
STRAWBERRY SAUCE: Heat strawberries in small pan until hot. Stir in liqueur or orange juice. Thicken with cornstarch mixture.
