- 1 8 ounce wheel of Brie, frozen
- 1/2 teaspoon sugar
- 1/4 cup warm water
- 1 tablespoon active dry yeast
- 1 1/4 cup flour
- 2 eggs
- 1 stick butter, diced, at room temperature
- 1/4 teaspoon salt

How to Make Brioche
Combine sugar, water, and yeast in a large bowl. Allow to sit for 5 minutes, and check to make sure the yeast is bubbly around the edges. If it is not active, discard, and start again with fresh yeast.1
Combine the flour, eggs, butter, and salt in the bowl of a stand mixer. Add the yeast at slow speed.
After all ingredients are combined, beat with the mixer blade (not the dough hook) for 5 minutes.
Allow the dough to rise until doubled in size. This may take 1 1/2- 2 hours.2
Punch the dough down, and continue with Step 3

How to Make Brie in Brioche
Roll half of the brioche dough to about 3-4 inches larger than the wheel of Brie.
Place the frozen Brie on top of the dough and fold the edges of the dough over the brie. Press the edges together where they join in the center of the Brie.
Place the covered brie, seam side down, on a greased cookie sheet
Brush with egg wash.
Let sit for 20 minutes at room temperature.2
Bake the Brie in an oven that has been preheated to 350° F for 25-30 minutes.3
Serve immediately if you'd like it warm, or allow to cool. The Brie can be reheated in a 400° F oven for 5 minutes.
