  • 1 onion, chopped
  • 1 tablespoon oil
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin seed
  • 3 tomatoes, peeled and diced
  • 2 cups cooked chicken, chopped
  • 1/2 cup chicken stock
  • 6 corn tortillas, cut in quarters
  • 1 1/2 cups grated sharp Cheddar cheese
  • 6 tablespoon sour cream
  • Lettuce
  • Tomatoes, sliced

Preparation

Step 1

Place onion and oil in glass container.

Microwave on high for 2 to 3 minutes or until tender. Add salt, chili powder and ground cumin seed; mix well. Add diced tomatoes, chicken and stock,

Microwave on high for 3 minutes, stirring each minute.

Layer chicken mixture, tortillas and cheese in large glass baking dish. Cover.

Microwave on high for 8 minutes, turning halfway through cooking time.

Garnish each portion with 1 tablespoon sour cream, lettuce and tomatoes.
