Fruit and oatmeal breakfast bars 1 Picture


  • 2 C rolled oats
  • 1 1/4 C flour
  • 1/2 C firmly packed brown sugar
  • 1/2 t cinnamon
  • 3/4 C vegetable oil
  • 1 t vanilla
  • 1/4 t salt
  • 1/4 t baking powder
  • 1-2 C canned black berries, pureed pears, pureed peaches, pureed apples, or any non-citrus fruit jam or jelly
  • But if you use strawberries or red raspberries use white sugar rather than brown.



Step 1

Preheat oven to 375. Combine oats, flour, sugar, cinnamon, baking powder, salt, vanilla, and oil. Mix well and pat half of the mixture into the bottom of a 10X10 baking pan. Bake for 13-15 minutes or until slightly browned. Spoon fruit puree over baked layer and top with the remaining oatmeal mixture. Return to oven and bake an additional 20-25 minutes or until the top is slightly browned. After removing from the oven press the topping into the fruit filling and allow to cool before cutting.
