Fruit and oatmeal breakfast bars
- 2 C rolled oats
- 1 1/4 C flour
- 1/2 C firmly packed brown sugar
- 1/2 t cinnamon
- 3/4 C vegetable oil
- 1 t vanilla
- 1/4 t salt
- 1/4 t baking powder
- 1-2 C canned black berries, pureed pears, pureed peaches, pureed apples, or any non-citrus fruit jam or jelly
- But if you use strawberries or red raspberries use white sugar rather than brown.
Preheat oven to 375. Combine oats, flour, sugar, cinnamon, baking powder, salt, vanilla, and oil. Mix well and pat half of the mixture into the bottom of a 10X10 baking pan. Bake for 13-15 minutes or until slightly browned. Spoon fruit puree over baked layer and top with the remaining oatmeal mixture. Return to oven and bake an additional 20-25 minutes or until the top is slightly browned. After removing from the oven press the topping into the fruit filling and allow to cool before cutting.
