Ingredients

  • 1 lb. unblanched filberts
  • 12 egg yolks
  • 2 cups sugar
  • 1/4 cup sifted flour
  • 1 tsp lemon juice
  • 1-1/2 tsp salt
  • 1/4 tsp cinamon
  • 12 stiff beaten egg whites
  • powdered sugar

Preparation

Step 1

1. Grind filberts, set aside in large mixer.

2. Beat egg yolks until thick. Add flour, lemon peel and juice, vanilla, salt, cinamon and ground nuts, mix well. Fold in stiff beaten egg whites 1/4 at a time.

3. Turn in ungreased 10" tube pan and bake at 325 deg. for about 1 hour and 10 min. or until no imprints remain.

4. Invert to cool, loosen with spatula and remove. Dust with powdered sugar
