Ingredients
- Pork Brine:
- 3 quarts water
- 1/2 cup kosher salt
- 1/2 cup brown sugar
- 1/2 vanilla bean
- 1/2 cup Myers Rum
- 1 orange, cut in half
- 1 lemon, cut in half
- 3 garlic cloves
- 1 cinnamon stick
- 1 teaspoon black pepper
- 6 double thick pork chops

Preparation
Step 1
For the Pork Brine: Add all ingredients into a saucepot and bring to a simmer and cook for 5 to 10 minutes. Cool completely before submerging pork chops completely in brine, and let marinate for 12 to 24 hours.
To Serve: Grill pork chops until medium and serve with black rice and generous helping of chutney.
