Ingredients

  • Pork Brine:

  • 3

    quarts water

  • 1/2

    cup kosher salt

  • 1/2

    cup brown sugar

  • 1/2

    vanilla bean

  • 1/2

    cup Myers Rum

  • 1

    orange, cut in half

  • 1

    lemon, cut in half

  • 3

    garlic cloves

  • 1

    cinnamon stick

  • 1

    teaspoon black pepper

  • 6

    double thick pork chops

Directions

For the Pork Brine: Add all ingredients into a saucepot and bring to a simmer and cook for 5 to 10 minutes. Cool completely before submerging pork chops completely in brine, and let marinate for 12 to 24 hours. To Serve: Grill pork chops until medium and serve with black rice and generous helping of chutney.
