Ingredients
- 8 oz rotini or fusilli pasta, cooked ad dente & drained
- 1/2 c OO, divided
- 1/4 c sherry vinegar
- 1/4 t salt
- 1/4 tcrushed red pepper
- 4 large plum tomatoes, seeded & diced
- 4 green onions, thinly sliced
- 18 kalamata olives, pitted
- 4 oz salami, sliced
- 2 pkgs 5 1/2 oz each goat cheese, cut into 1 1/2" pieces
- 1/2 c fresh basil, thinly sliced
- red leaf lettuce
- Basil for garnish

Preparation
Step 1
Toss pasta in a large bowl w/2T OO
Cover & chill
In small bowl, combine vinegars, s&p
Whisk in remaining oil & pour over pasta
Add tomatoes, onions. olives, salami, cheese & basil
Toss to coat
Fan lettuce on platter, mound salad in center, garnish w/basil
