Almond Filling
By norsegal8
This filling is pliable enough to be spread inside a coffeecake and thick enough to be rolled into shapes. It's a traditional filling for sweet croissants.

Ingredients
- 1/4 cup (2 1/4 ounces) almond paste
- 1/4 cup sugar
- 1 large egg
- 2 teaspoons brandy, rum and almond syrup
- 1/2 teaspoon salt
- 3/4 cup sliced almonds
- 1 cup cake crumbs (5 ounces)*
Preparation
Step 1
Place the almond paste, sugar, egg, brandy and salt in a food processor and purée until smooth. Pour the mixture into a mixing bowl and stir in the almonds and the cake crumbs. Refrigerate the mixture until ready to use.
*To make cake crumbs, place 6 1/2-inch slices of pound cake on an ungreased baking sheet and bake for 10 minutes at 300°F. Turn over, bake for 10 minutes more, then cool. Process the slices in the food processor to make crumbs.
