Ingredients

  • Filling:
  • 1 pkg cream cheese
  • 2/3 C powdered sugar
  • 1 C pureed butternut squash (I use left overs)
  • 2 eggs
  • 1/4 t salt
  • Batter:
  • 2 C sugar
  • 1 C milk
  • 1 C of berry filling or puree (strawberry, blueberry, cherry, etc..)
  • 1/2 C vegetable oil
  • 2 C flour
  • 3 t baking soda
  • 1/2 t salt

Preparation

Step 1

Beat filling and batter ingredients separately in different bowls. Press half the batter in the bottom of a 10X10 pan. Pour filling mixture over the batter already in the pan. Place the remaining batter over the top of the filling. Bake at 350 for 1 hour or until top springs back when touched.
