Beef and Bean Enchiladas

  • 1 1/2 lbs. ground beef
  • 1 medium onion
  • 1 can refried beans
  • 1 tsp. salt
  • 1/8 tsp. garlic salt
  • 12 flour tortillas
  • 1/3 cup taco sauce
  • 2 cans enchilada sauce
  • 3 cups shredded cheddar cheese


Servings 6


Step 1

Saute beef and onions till brown. Stir in beans, salt, garlic salt, taco sauce. Heat until bubbly. Heat enchilada sauce. Pour 1/2 into ungreased baking dish. Place 1/3 cup of beef on each tortilla. Roll to enclose filling. Place seam side down in baking pan. Pour remaining sauce over tortillas. Cover with cheese. Bake in oven at 350 degrees for 15 minutes uncovered. Can be made ahead of time and frozen.
